Tonight we were served "Leg"...I think it was the leg of a goat (???) and like most animal legs there was not much meat on it...the 'leg' was cooked for 6 hours in a pressure cooker...nothing was left out - bone, ligaments, cartilage and marrow
...ah, the wonders of a pressure cooker; what seems impossible to sink ones teeth into becomes edible. Whether or not one should be eating bone, ligaments, cartilage, or marrow is very debatable - but then again I am almost positive that you can find most of these 'leg' parts in American hot dogs.
